    茶泡飯

    茶泡飯 (お茶漬け)

    食材 : 三文魚刺身4片
    白蘿蔔50克
    日本芥辣 / 紫菜絲 /  葱各少許
    白飯1碗
    木魚2安士
    調味 :
    綠茶粉 / 味醂 / 淡味醬油各1茶匙
    做法 :
    1. 木魚以600毫升水煮成木魚高湯;將高湯加入綠茶粉/味醂/淡味醬油拌勻,用慢火煮滾成茶湯,備用。
    2. 白蘿蔔磨茸,將三文魚刺身放在白飯上,再放上芥辣 / 白蘿蔔茸/葱粒,撒上紫菜絲,最後淋上茶湯即可。
     
    茶漬飯最好要熱飯熱茶,這樣吃起來才美味。
    其實在日本,茶漬飯是很隨意的一種簡單料理,肚子餓卻不想大費周章時,茶漬飯就是一個很好的選擇。日本有一種專門用來泡茶漬飯的"茶漬",吃法是在碗中盛好白飯後,灑上類似三島香鬆般的茶漬,再澆淋上熱水就是茶漬飯了,這是屬於免調味的茶漬飯。另一種作法,就是自己泡茶漬飯,日本茶漬飯的口味也是五花八門,有的只是白飯上灑些白芝麻,放顆酸酸的梅干,就這樣淋上熱茶也算一道茶泡飯,豪華的也有加生魚片的,現在大頭菜就介紹你一款平易近人又好吃的菜色-鮭魚茶漬飯。

    首先將鮭魚烤熟或煎熟,去皮及骨、刺後搗碎,碗中盛放白飯,灑上適量鮭魚碎以及少許白芝麻、鹽調味(也可以以飯友或三島香鬆替代),淋上鳥龍茶或昆布茶,灑上海苔絲及一點點山葵醬拌勻,就是好吃的鮭魚茶泡飯了。
    建議是以昆布茶來泡比較接近日本口味,否則也可以加一些紫蘇昆布(日系超市漬物攤位有售)來調味。其實,日本口味也不見得比較好吃,如果能夠以台式材料做出符合國人口味的台式茶泡飯,應該會更棒的!
